One way to remove vocals from a track is by using a process called phase cancellation. Phase cancellation tends to remove or partially remove mid-range frequencies that are mixed directly down the center channel. In many songs, vocals are mixed directly to the center (they can be heard in both the left and right channels). Vocal tracks also tend to occupy the mid-range frequencies. If you stack a waveform that's 180 degrees out of phase directly on top of the original waveform, you would be performing phase cancellation. Note that using phase cancellation to remove vocals may also remove other parts of the song. For more info search for "phase cancellation" on the web.
There are also ways to break apart music in a way that can allow you to create a instramental version of an otherwise vocal rich song. It's a matter of breaking down the song, sampling portions without vocals (assuming there are potions without vocals), and then rebuilding the song.
